Tomato Chutney

 Here’s a simple and quick recipe for Tomato Chutney that you can make in just a few minutes:


Ingredients:

3-4 ripe tomatoes, chopped

1 small onion, finely chopped (optional)

1-2 green chilies, chopped (adjust to spice preference)

1 tablespoon oil

1/2 teaspoon mustard seeds

1/2 teaspoon cumin seeds

1/4 teaspoon turmeric powder

1/2 teaspoon red chili powder (optional, for heat)

1 tablespoon jaggery or sugar (optional, for sweetness)

1 tablespoon tamarind paste or lemon juice (for tanginess)

Salt to taste

Fresh coriander leaves (for garnish)


Instructions:

1. Sauté the Spices: Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds. Let them splutter for a few seconds.

2. Cook the Tomatoes: Add the chopped onions (if using) and sauté until they turn soft and translucent. Then, add the chopped tomatoes and green chilies. Cook for about 5-7 minutes, until the tomatoes become soft and mushy.

3. Add Spices: Add turmeric powder, red chili powder (if using), and salt to taste. Stir well and cook for another 2-3 minutes.

4. Blend the Chutney: Let the tomato mixture cool slightly. Then, transfer it to a blender or food processor. Add tamarind paste or lemon juice, and jaggery or sugar (optional for sweetness). Blend into a smooth chutney. If the chutney is too thick, you can add a little water to reach the desired consistency.

5. Serve: Taste and adjust the seasoning if necessary. Garnish with fresh coriander leaves.


Tips:

You can adjust the sweetness or tanginess by varying the amount of jaggery/sugar or tamarind/lemon juice.

For a smoky flavor, you can roast the tomatoes before making the chutney.
