Making soft Chapati dough

Ingredients:

2 cups whole wheat flour (atta)

1/2 teaspoon salt (optional)

1 tablespoon oil or ghee (optional, for softness)

Water (approximately 3/4 to 1 cup)


Instructions:

1. Mix Dry Ingredients: In a large mixing bowl, combine the whole wheat flour and salt (if using). Mix well.

2. Add Oil/Ghee: If you’re using oil or ghee, add it to the flour mixture and mix it in with your fingers until the flour looks crumbly.

3. Add Water Gradually: Start adding water little by little, mixing with your hands to form the dough. The amount of water needed may vary slightly based on the type of flour, so add it gradually until the dough comes together.

4. Knead the Dough: Once the dough starts coming together, knead it on a clean surface. Add a little more water if needed to form a smooth, soft dough. Knead for about 5-7 minutes until the dough is smooth and elastic.

5. Rest the Dough: Cover the dough with a damp cloth or plastic wrap and let it rest for at least 20-30 minutes. Resting helps the dough become softer and easier to roll.

6. Roll the Chapatis: After resting, divide the dough into small balls (about the size of a golf ball). Roll each ball between your palms to make it smooth, then roll it out into a thin, round disc using a rolling pin. If needed, dust lightly with flour while rolling to prevent sticking.

7. Cook the Chapatis: Heat a tava (griddle) or non-stick pan over medium-high heat. Once hot, place the rolled-out chapati onto the hot pan. Cook until small bubbles appear on the surface. Flip the chapati, and cook the other side until you see golden brown spots. Press gently with a cloth or spatula to help it puff up. Flip once more to cook any remaining raw parts.

8. Serve: Serve the chapatis warm with curry or any side dish of your choice!
