How to make soft chapatis, 

steps:


Ingredients:

2 cups whole wheat flour (atta)

1/2 teaspoon salt (optional)

1 tablespoon oil or ghee (optional, for extra softness)

Water (approximately 3/4 to 1 cup)

Extra flour for rolling (optional)


Instructions:

1. Mix Dry Ingredients: In a large mixing bowl, combine the whole wheat flour and salt (if using). Mix well.

2. Add Oil/Ghee: Add 1 tablespoon of oil or ghee to the flour mixture. This helps in making the chapatis softer. Mix it well using your fingers until the mixture resembles breadcrumbs.

3. Add Water Gradually: Slowly add water a little at a time. Mix with your hands as you pour in the water. Keep adding water until the dough starts coming together.

4. Knead the Dough: Once the dough begins to form, knead it for 7-10 minutes until it’s smooth, soft, and elastic. The dough should not be sticky, but should feel soft and pliable. If it feels dry, add a little more water. If it’s sticky, dust it with a little more flour.

5. Rest the Dough: Cover the dough with a damp cloth or plastic wrap and let it rest for 20-30 minutes. This makes the dough softer and easier to roll.

6. Divide and Roll: After resting, divide the dough into small balls (about the size of a golf ball). Roll each ball between your palms to smooth it out. Dust lightly with flour and roll each ball into a thin, round disc, being careful not to use too much flour.

7. Cook the Chapatis:

Heat a tava, griddle, or non-stick pan over medium-high heat.

Once the pan is hot, place the rolled-out chapati on it.

When you see bubbles start forming, flip it over. Press gently with a cloth or spatula to help it puff up.

Flip again after about 20 seconds to cook the second side, pressing gently to get golden brown spots.

8. Serve: Remove the chapati from the pan and keep it warm by covering it with a cloth. Serve immediately with curry, sabzi, or any dish of your choice!


Tips for Soft Chapatis:

Knead well: Kneading the dough for 7-10 minutes is key to soft chapatis.

Resting the dough: Letting the dough rest for 20-30 minutes helps it become soft and easy to roll.

Use warm water: Warm water helps make a softer dough.

Cook on medium-high heat: Ensure the pan is hot, but not too hot. This helps the chapatis puff up.
