Onion Chutney

 Here’s a quick and simple recipe for Onion Chutney that you can make in just a few minutes:


Ingredients:

2 medium-sized onions, chopped

1-2 green chilies (adjust to your spice preference)

1 tablespoon oil

1/2 teaspoon mustard seeds

1/2 teaspoon cumin seeds

1/4 teaspoon turmeric powder

1/2 teaspoon red chili powder (optional, for extra spice)

1 tablespoon tamarind paste (or lemon juice for tanginess)

Salt to taste

A small bunch of fresh coriander leaves (optional)

1 tablespoon jaggery or sugar (optional, for a slight sweetness)


Instructions:

1. Sauté the Onions: Heat oil in a pan over medium heat. Add the mustard seeds and cumin seeds. Let them splutter for a few seconds.

2. Cook the Onions: Add the chopped onions to the pan and sauté them until they turn golden brown and soft (about 5-7 minutes).

3. Add the Spices: Once the onions are cooked, add turmeric powder, red chili powder (if using), and salt. Stir everything well and cook for another 2-3 minutes.

4. Blend the Chutney: Let the onion mixture cool for a few minutes. Then, transfer it to a blender or food processor. Add tamarind paste (or lemon juice), jaggery or sugar (optional), and fresh coriander leaves (optional). Blend everything into a smooth chutney. Add a little water if needed to adjust the consistency.

5. Serve: Taste and adjust salt or sweetness as needed. Serve the chutney with dosa, idli, or any Indian snacks.


Tips:

If you prefer a spicier chutney, you can add more green chilies.

You can also add a pinch of asafoetida (hing) for an additional flavor.

This chutney can be stored in an airtight container in the refrigerator for 2-3 days.
