Make Tuwar Dal

 Here’s a simple recipe for making Tuwar Dal (Toor Dal or Pigeon Pea Lentils), a classic and comforting dish in Indian cuisine:


Ingredients:

1 cup toor dal (pigeon peas)

1 tablespoon oil or ghee

1 small onion, finely chopped

1-2 tomatoes, chopped

1 green chili, slit (optional)

1 teaspoon ginger-garlic paste

1/2 teaspoon turmeric powder

1 teaspoon cumin seeds

1/2 teaspoon mustard seeds (optional)

1/2 teaspoon cumin powder

1/2 teaspoon coriander powder

1/2 teaspoon red chili powder (optional, for spice)

Salt to taste

2-3 cups water (adjust to consistency)

Fresh coriander leaves for garnish

1/2 teaspoon asafoetida (hing) (optional)

1 tablespoon lemon juice (optional)


Instructions:

1. Rinse the Dal: Wash the toor dal thoroughly under cold water until the water runs clear. This removes excess starch.

2. Cook the Dal: In a pressure cooker or pot, add the washed toor dal and about 2-3 cups of water. If using a pressure cooker, cook for 3-4 whistles or until the dal is soft and fully cooked. If cooking in a pot, bring the dal to a boil, then reduce the heat and simmer for 20-30 minutes until soft.

3. Tempering (Tadka):

In a separate pan, heat oil or ghee over medium heat.

Add cumin seeds, mustard seeds (if using), and asafoetida (hing) to the hot oil. Let them splutter for a few seconds.

Add chopped onions and sauté until they turn golden brown.

Add ginger-garlic paste and sauté for another minute until fragrant.

Add chopped tomatoes and cook until they soften and become mushy (about 5-7 minutes).

Add turmeric powder, cumin powder, coriander powder, red chili powder (if using), and salt. Stir well.

4. Combine Dal and Tadka: Once the dal is cooked, add the prepared tadka (tempering) to the dal. Mix well and simmer for 5-10 minutes to allow the flavors to blend together. Add water if you prefer a thinner consistency.

5. Finish and Garnish: Once the dal is cooked and has reached your desired consistency, turn off the heat. If you like, add a squeeze of lemon juice for a tangy flavor and stir.

6. Serve: Garnish with fresh coriander leaves and serve hot with steamed rice, roti, or any Indian bread.


Tips:

You can adjust the spices according to your preference.

For a richer taste, use ghee instead of oil.

If you like the dal to be a little spicier, you can add green chilies while tempering the spices.
