Chicken Shawarma

 Here’s a simple and delicious recipe for Chicken Shawarma:


Ingredients:


For the Chicken Marinade:

500g boneless chicken thighs (or chicken breast)

3 tablespoons olive oil

2 tablespoons lemon juice

4 garlic cloves (minced)

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon ground paprika

1 teaspoon ground turmeric

1 teaspoon ground cinnamon

1 teaspoon ground cardamom (optional)

1 teaspoon ground black pepper

1 teaspoon salt

1 tablespoon vinegar (optional)

1 tablespoon plain yogurt (optional for extra tenderness)


For the Garlic Sauce (Tahini Sauce):

½ cup mayonnaise

2 tablespoons tahini (optional)

2 tablespoons lemon juice

3-4 garlic cloves (minced)

Salt and pepper to taste

2 tablespoons water (to adjust consistency)


For Serving:

Pita bread, flatbreads, or tortillas

Sliced onions, tomatoes, and cucumber

Fresh parsley (optional)




Instructions:


1. Marinate the Chicken:

In a large bowl, combine olive oil, lemon juice, garlic, cumin, coriander, paprika, turmeric, cinnamon, cardamom (if using), black pepper, salt, and yogurt (optional).

Add the chicken pieces to the marinade and coat well.

Cover and refrigerate for at least 2 hours (or overnight for the best flavor).


2. Cook the Chicken:


You can cook the chicken in a few different ways:

Grilling: Preheat the grill to medium-high heat. Grill the marinated chicken for about 5-7 minutes per side or until fully cooked, with an internal temperature of 165°F (75°C). You can also cook it on a grill pan or outdoor barbecue.

Pan-frying: Heat a little oil in a large pan over medium-high heat. Cook the chicken for 5-7 minutes on each side until golden and cooked through. You can also slice the chicken into strips for quicker cooking.

Oven-baked: Preheat the oven to 375°F (190°C). Place the chicken on a baking sheet and bake for 25-30 minutes, flipping halfway through.


3. Make the Garlic Sauce:

In a small bowl, combine mayonnaise, tahini (optional), lemon juice, minced garlic, and salt and pepper.

Stir well and add water to adjust the consistency. It should be smooth and creamy.


4. Assemble the Shawarma:

Slice the cooked chicken into thin strips.

Warm the pita bread or flatbread in the oven or on a pan.

Place the chicken on the bread and drizzle with the garlic sauce.

Add sliced tomatoes, cucumbers, and onions for crunch and freshness. You can also garnish with fresh parsley.


5. Serve:

Roll up the pita or flatbread, and your homemade chicken shawarma is ready to serve! Enjoy with some fries or a side salad if you like.




Tips:

You can add a bit of chili or hot sauce to the garlic sauce for extra spice.

If you don’t have a grill or pan, you can also cook the chicken in a broiler or air fryer for a crispy result.

For a more authentic shawarma taste, consider using a shawarma spice mix, which can be found at most grocery stores or specialty markets.
